Ingredients

  • 2 bottles of New Planet Beer – Belgian Ale (one to cook with, one to enjoy while cooking!)
  • 2 pounds mussels, cleaned
  • Finely sliced green onion – 3 stalks – & chopped Italian parsley 1 tbs.
  • 1-2 tsp  Chopped garlic  and 1tsp chopped ginger
  • Extra Virgin Olive Oil
  • Salt and pepper

Cooking Instructions

  • Heat large saucepan to medium-high heat with 1tbl spoon of Extra Virgin Olive Oil
  • Add cleaned mussels, with 1-2 tsp. chopped garlic & 1tsp. of chopped Ginger (fresh or paste)
  • Place lid over pan and let steam for a few minutes, then add ½ – ¾ bottle of Belgian Ale, and put lid back on pan.
  • Once the mussels are opening (as if to drink the yummy beer), turn heat off and let sit for a minute, adding the sliced green onions for added aroma and flavor.
  • Serve in bowl and sprinkle chopped Parsley over served Mussels as the final touch.

Optional Addition’s:

Chorizo can be a great addition – fried separately and added in to the broth before serving

½ cup of buttermilk added to the broth creates a smooth and rich texture as well

Traditionally served with a side of fresh cut fries

 Serves 3-4 people.

With the start of National Celiac Awareness Month coinciding the Cinco de Mayo celebration we thought we would share a wonderful recipe that pairs beautifully with our Blonde Ale.
 
Roasted Chicken Tacos
Ian Clark, BRU handbuilt ales & eats
Serves 4 
 
1 whole roasted chicken, meat pulled
2 12 oz. jars of your favorite organic salsa
1 dozen organic corn tortillas
3/4 head green cabbage, shredded
4 limes, juice
2 tblsp olive oil
1 cup thinly sliced radishes
1 cup shredded cotija cheese
1/2 cup sprigs of cilantro
salt and pepper to taste
 
Place pulled chicken meat into a sauce pot and pour salsa over it. Simmer chicken in salsa for 15-20 minutes and season with salt.Toss shredded cabbage, cilantro and radishes in a bowl with lime juice and olive oil, season with salt and pepper.
 
For plate up- Warm tortillas slightly in a warm pan. Place chicken and sauce in the center of the tortillas. Put a hefty amount of cabbage slaw on top and generously apply cotija. Best enjoyed with a New Planet Blonde Ale
 
Avocado with charred hatch chile and tomatillo salsa, grilled corn and black beans

1 ripe avocado, very large dice  
1/2 cup of your favorite salsa (suggested salsa: hatch chile and tomatillo salsa)
1/4 cup cooked black beans
1/4 cup grilled corn, taken off the cob
3 sprigs cilantro ;eaves
1/2 lime, juiced
1 tblsp olive oil
salt to taste
your favorite organic corn chips
 
Large dice avocado and scoop out of skin. Place in a bowl with all other ingredients and mix very gently as to not break up the avocado. As you do this, taste frequently and season with salt as you go. Serve with corn tortilla chips and a crisp, light beer – AKA New Planet Blonde Ale

In the last month or so, you’ve painstakingly prepared two delicious, gluten-free holiday meals for a family and friends. During the holiday season, sticking to a gluten-free diet is no easy feat! We’re impressed and think you deserve a break, which is why we’d like to suggest you whip up one of these simple gluten-free appetizers or drinks for your New Year’s Eve festivities.

  • Almonds, cashews, peanuts, pecans, pistachios, and walnuts are all naturally gluten-free. However, some manufacturers cross-contaminate nuts during the packaging process, so look for gluten-free labels. All of Blue Diamond‘s products are gluten-free except for their Jordan Almonds and Wasabi & Soy Sauce Almonds.
  • Fresh fruit makes a sweet, healthy appetizer that will balance out all of the savory appetizers.
  • Vegetable trays also make great, healthy appetizers. Just make sure to pair them with a salad dressing that is certified gluten-free (Hidden Valley, Annie’s, and Organic Ville manufacturer gluten-free ranch dressings).
  • For a snack that takes seconds to throw together, cut gluten-free cheese into small slices, and place them on a platter with Glutino crackers.
  • Looking for a traditional, crowd-pleasing appetizer? Say no more: Gluten-free Chex Mix.
  • Pick a dip to pair with gluten-free chips: Guacamole, Hummus, or Spinach & Artichoke.
  • This Spinach, Mushroom and Feta Flatbread makes an irresistible, mouth-watering appetizer!
  • Make a big batch of these meatballs, stick some toothpicks in them, and you’re good to go.
  • Who doesn’t love beer? Pick up a few packs of New Planet Beer’s Blonde, Raspberry, or Pale Ale. You can also make some refreshing mixed drinks using New Plant Beer.
  • Make sure you have some Champagne to toast with at midnight!

gingerbread cookieThere may still be twelve days left until Christmas, but we’re already dreaming about all of the gluten-free treats we’ll get to enjoy with family and friends. But why should you have to wait until the end of December to start spreading the holiday cheer? Using the recipes below, bake some gluten-free sugar or gingerbread cookies, then hand deliver them to family and friends’ houses.

Feeling extra-festive? Invite some friends over to make gluten-free gingerbread houses (just make sure to use gluten-free candy)!

Gluten-Free Rolled Sugar Cookies

Ingredients:

  • 2 eggs
  • 1/2 cup amaranth flour
  • 1/2 cup potato starch
  • 1/2 cup sorghum flour
  • 1/2 cup sweet rice flour
  • 1/2 cup sugar
  • 1/2 cup tapioca flour
  • 8 tablespoons (1 stick) unsalted butter, at room temperature
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoon vanilla extract
  • 1 teaspoon xanthan gum
  • A pinch fresh nutmeg

Directions:

Whisk all of the flours together in a medium-sized bowl, then carefully sift them through a fine-mesh sieve into another bowl. Add the baking powder, salt, and xanthan gum to that bowl before whisking everything together again. Set aside.

Stir the butter in a separate bowl, or use the beater attachment of a stand mixer to stir it. Add the sugar, then cream them together until they have combined. Add the two eggs and vanilla extract before beating the mixture for a couple more minutes. Stir in a pinch of nutmeg.

Sift the dry ingredients mixture into the liquid one, one cup at a time. Make sure that everything is entirely mixed together. The thick batter won’t be as stiff as traditional rolled cookie dough and won’t be completely sticky to the touch. Wrap the dough in plastic and refrigerate it overnight.

Take the dough out of the refrigerator and let it warm up to room temperature, but don’t let it reach complete pliability. Ideally, the dough should still be rather stiff from refrigeration. Preheat the oven to 375° F, then roll out the cookie dough on a gluten-free cutting board, or between two pieces of parchment paper. Use cookie cutters or a knife to cut out holiday shapes or create your own.

Bake cookies for 8-12 minutes, depending on your oven and how crispy you’d like them to be. Let them cool 10 minutes before tasting them.

Makes about 15-20 cookies, depending on shapes.

Gingerbread Cookies or House (gluten-free, dairy-free, egg-free)

Ingredients:

  • 1 cup arrowroot flour
  • 1 ¼ cup sorghum flour (plus more for dusting)
  • 1 ¼ cup teff flour
  • 1 cup coconut sugar (or a sugar of your choice)
  • 1 tsp baking soda
  • ½ tsp sea salt
  • ½ cup coconut oil, melted
  • ½ cup maple syrup (can also use agave or honey)
  • 1 tbsp molasses
  • ¼- ½ cup unsweetened almond milk (or milk of your choice)
  • 2 tsp cinnamon
  • ½ tsp cloves
  • 2 tsp ground ginger
  • 2 tbsp unsweetened applesauce
  • 2 ½ tbsp ground flax mixed with 3 tbsp warm water (the applesauce and flax replace 2 eggs)
  • ½ tsp xanthan gum

Directions:

Combine maple syrup, molasses, oil, and sugar in a large bowl. Add applesauce and flax-water mixture to the large bowl. Set aside.

In a medium-sized bowl, combine baking soda, flours, sea salt, spices and xanthan gum. Add half of the dry ingredients to the wet ingredients, then stir.  Add 1/4 cup of milk, then stir in remaining flour.  Add more milk if necessary.

The dough should be a little sticky at this point, so use floured hands to roll it into a ball and wrap it in plastic before refrigerating. If you’d rather keep it in the bowl while you refrigerate it, scrape the dough down the sides of the bowl before you chill it. Refrigerate for at least 40 minutes.

Preheat oven to 350° F and line a baking tray with parchment. Remove dough from fridge and divide in half.  Roll out each half on a floured, gluten-free surface to 1/4 inch thickness before cutting into desired shapes. Place cookies at least 1 inch from one another on the parchment and bake for 10-12 minutes depending on your oven and how crispy you’d like them.

Makes about 3 dozen cookies (depending on size) or 1 gingerbread house and a few accessories.

Each day, amusement parks provide effortless fun for the whole family — that is, until someone gets hungry. Something as simple as finding gluten-free fare at an amusement park can quickly escalate into a stressful challenge for even the most patient guest.

But as information about living a gluten-free lifestyle has spread, theme parks have increased the number of gluten-free options they provide their guests. As you plan your next trip to an amusement park, follow New Planet Beer’s simple steps to ensuring a fun, gluten-free day:

  1. Check the amusement park’s website for information about food allergies and special dietary needs. Some theme parks, such as Elitch Gardens and Hersheypark, list comprehensive guides on their website that note allergen information for specific foods sold at each restaurant or stand within their park.
  2. Make reservations in advance. Many theme parks offer gluten-free dining options, but suggest that you call in advance to reserve a table. Disneyland will take reservations up to 60 days before your trip, and Walt Disney World and Universal Orlando accept them up to 180 days in advance. When you call, be sure to mention your gluten intolerance so that the person taking your reservation can note it accordingly. It’s also a good idea to ask for the name of the person who takes your reservation and/or a reservation confirmation via email.
  3. Ask to speak with a manager and/or chef once you arrive at a restaurant within the park. Once you have informed the manager/chef of your gluten intolerance, they’ll usually provide you with a gluten-free menu and answer any questions you might have before preparing your gluten-free meal.
  4. Ask about cross-contamination. While an amusement park may provide gluten-free fare, ensure that the meal your getting isn’t contaminated by gluten as its being prepared. Don’t hesitate to ask the chef specific questions about whether or not he prepares the meal using clean surfaces, pans and utensils that haven’t come into contact with gluten.
  5. Bring your own food if the amusement park allows it. Check the theme park’s website to see if they specify whether or not you can bring your own gluten-free meal with you; some permit this, provided that you inform security of your gluten intolerance as you enter the park.

And above all else, remember to have fun!

Fire up the barbecue and break out some ice cold beers, because the Fourth of July is right around the corner! Invite over some family and friends then follow the tips below for a stress-free, gluten-free barbecue.

  1. Purchase gluten-free hot dog or hamburger buns. Some popular options include Rudi’s Multigrain Hot Dog Rolls and Hamburger Buns, Udi’s Classic Hot Dog and Hamburger Buns, Whole Foods Bakehouse Hamburger Buns, and Ener-G Tapioca Hot Dog and Hamburger Buns.
  2. Clean the grill. Gluten-free products shouldn’t be cooked on surfaces that have been contaminated by marinades or sauces that contain gluten, so be sure to clean off your grill before you start cooking.
  3. Grill gluten-free products separately. To avoid cross-contamination, cook gluten-free products first, keep them on one side of the grill, or grill them on aluminum foil.
  4. Top it off with gluten-free barbecue sauce. Make sure that all of the condiments and sauces you use to cook are gluten-free. When you’re shopping for gluten-free products, it’s important to check labels because ingredients are always changing. Some barbecue sauces that are gluten-free as of June 2012 include Randy Jones Gluten-Free BBQ Sauce, Organic Annie’s Original BBQ Sauce, Sweet Baby Ray’s BBQ Sauce, Bone Suckin’ Sauce, Heinz Original BBQ Sauce, and Organicville’s Original BBQ Sauce.
  5. Chill out with an ice-cold New Planet Beer. Pick up a few packs of Tread Lightly Ale, 3R Raspberry Ale, or Off Grid Pale Ale, and throw them in a cooler filled with ice.
